Ingredients

• 1 whole grain pita

• 1 cup baby spinach

• 1/2 (14 ounce) package low-fat extra-firm tofu, cubed

• 1/4 cup low-fat mozzarella cheese, shredded

• 1/2 lemon, juiced

• salt and ground black pepper, to taste

Directions

1. Top the pita with the spinach, tofu, and mozzarella. Season with salt and pepper and sprinkle with lemon juice.

2. Place in toaster oven (4 – 5 minutes) or microwave (2 – 3 minutes) until cheese has melted to desired consistency.
