Ingredients

Directions

1/4 C. all-purpose flour

1. In a shallow dish, mix together the flour, salt 2 tsp salt

and black pepper.

1/4 tsp ground black pepper

2. Coat the veal shanks with the seasoned flour

2 lb. veal shank

evenly.

3 tbsp butter

3 tbsp olive oil

3. In a large skillet, melt the butter and oil

1 C. chopped onion

on medium heat and sear the shanks till

1 C. thinly sliced carrots

browned completely.

1/2 C. chopped celery

4. Transfer the shanks into a plate and keep

2 cloves garlic, crushed

aside.

1 (8 oz.) can tomato sauce

5. In the same skillet, add the onion, carrots,

celery and garlic and sauté for about 5

6. Stir in the tomato sauce, water, basil, thyme, 3 sprigs fresh parsley
