Ingredients

1 16 oz. container Cottage Cheese

1 C. all-purpose flour, plus more for

2 eggs

rolling out dough

1/2 C. non-dairy Parmesan cheese

substitute

1 tsp salt

1 tsp ground black pepper

1 tsp garlic powder

Directions

1. Arrange a mesh strainer over a bowl. Place the cottage cheese in the mesh strainer and keep aside for about 2 hours, stirring occasionally. Discard the liquid.

2. In a large bowl, add the drained cottage cheese, eggs, non-dairy Parmesan cheese substitute, salt, pepper, garlic powder and flour and mix till a very soft and sticky dough forms. Make a ball with the mixture and lightly dust with the flour.

3. With a plastic wrap, cover the dough ball and refrigerate for about 1 hour.

4. Divide the dough into 4 pieces. Place each dough piece onto a lightly floured surface and roll each piece into a 1/2-inch thick rope.

5. Cut each rope into 1-inch pieces, and arrange onto a lightly floured baking sheet.

6. Roll the gnocchi down the tines of a fork to create the ridges and return them to the baking sheet. Refrigerate till use.

7. In a large pan of the salted boiling water, add the lemon juice and gnocchi in batches and cook for about 2 minutes.

8. Drain well.

9. Serve with your favorite sauce and garnishing.
