Smoky Tempeh Pizza from Scratch

I love having pizza and a whole range of snacks if I have friends coming over for a movie night—sometimes I even get them to join in on the pizza making! This recipe is special because it feels fancy and rustic, while offering flavors that anyone can enjoy. Switch it up by adding other vegetables and dipping the crust into a sauce of your choice. To save time, you can use a store-bought pizza base.

MAKES 1 LARGE PIZZA

PIZZA DOUGH

¼ cup (42 g) ground flaxseed

1¼ cups (300 ml) lukewarm oat milk, around 95°F (35°C)

½ tsp salt

1 tsp sugar

1 tbsp (12 g) dry yeast

3 tbsp (45 ml) olive oil

1¼ cups (150 g) buckwheat flour

1½ cups (240 g) rice flour

TEMPEH SAUCE

7 oz (198 g) tempeh, crumbled

2 tbsp (30 ml) tamari

½ tbsp (8 ml) maple syrup

1 tbsp (16 g) tomato paste

1 tsp paprika

1 tsp liquid smoke

Juice of ½ lemon

1 tsp olive oil

CHEESE

½ cup (120 ml) unsweetened almond milk, divided

2 tbsp (16 g) cornstarch

2 tbsp (16 g) nutritional yeast

1 tsp ground turmeric

1 tsp garlic granules or garlic powder

TOPPINGS AND FOR SERVING

Zucchini

Mushrooms

Vegan cream cheese

Side salad or dipping sauce (optional)
