FOR SECONDARY FERMENTATION
1. Line up four 1-quart jars. Add ¼ cup of pomegranate juice, ½ teaspoon of lemon juice, and 1 slice of ginger to each jar.
2. Fill each jar with equal amounts of kombucha, leaving about 1 inch of headspace at the top of each jar.
3. Secure and tighten the lid of each jar and allow the kombucha to ferment in a warm location, about 72°F, for 2 days.
4. Using a funnel, transfer the kombucha to bottles, straining out the ginger as you go. Cap tightly.
5. Chill before serving.
