TUNA WITH GUACAMOLE

Tuna suits being cooked on the griddle, etching attractive scorch lines into the pale surface, giving onto moist, dark and almost raw fish in the middle. It’s vital, as ever, but particularly in this instance, to get the griddle really hot before committing the fish and just leaving it long enough to sear before turning the fillets. The firm, meaty flesh goes very well with similarly dense avocado and can take the other spicy flavours of guacamole.
