What the Kids Can Do

They can measure the ingredients and mix up the sauce. If you’re using tofu, they can cut that up. They might be able to slice the scallions, peppers, and basil using an age-appropriate knife.

Make Ahead

You can cut up all of the ingredients a day or two ahead to make life easier when you pull out that pan at 6:47 p.m. Or maybe I’m just projecting.

Cooking Tip

When you need to cut meat very thin, or even to finely chop it, it’s helpful to first wrap it in plastic wrap and put it in the freezer for 20 minutes. This firms up the meat so it’s easier to get super-thin slices, but it will lose its chill as you cut it, so no need to worry about additional cooking time. This works for steak, fish, lamb, pork—pretty much everything.
