STEAMING

I normally steam my veggies if I want them to be very soft and squishy. Steaming doesn’t accentuate the flavour especially, but it does tend to make the veggies soft, so it’s easy to purée them and get a smooth, creamy texture to make things like risottos, simple purées for sweet recipes or dips. Steaming is also awesome as it allows almost all the goodness of the vegetables to be retained, so it’s a very nutritious way to cook. I tend to avoid steaming if I’m eating my veggies on their own, as the end taste isn’t overly exciting. You also can’t season them as they cook, so it’s harder to create amazing flavours at the end.
