20. Mushroom bacon and Egg Burritos

Nothing like starting a day with a delicious yet satisfying meal and a burrito works sumptuously when eggs are in their way.

Time: 20 minutes Yields: 2 servings

Ingredients

4 slices smoked Applewood turkey bacon

10 large-sized eggs

4 flour tortillas

2 cups spinach

2 oz. button mushrooms (sliced and stemmed)

Direction

1. Put the bacon in a pot. Cook until its crispy.

2. Transfer the bacon to a paper-lined plate. Discard a large part of the drippings, leave a small quantity in the pot.

3. Add in the mushrooms and spinach. Cook till soft

4. Add eggs. Cook for 2 minutes. Then form large curds with the egg mixture.

5. Continue folding the eggs as you cook.

6. Add pepper and salt.

7. Divide the egg mixture in the middle of the tortillas.

8. Fold and roll the tortillas in burritos style.

9. Serve.
