1 can of rinsed and drained black beans

1 can of enchilada sauce

1 can of drained whole kernel corn

¼ cup of minced fresh cilantro

1 cup of shredded Mexican cheese blend

2 lightly beaten large eggs

Salsa, minced fresh cilantro, and sour cream (optional)

Procedure:

1. Cook and crumble the chicken in a big skillet on medium heat for 6 to 8 minutes or until the chicken is not pink. Add the seasonings

2. Place the chicken in a 4-quart slow cooker and add corn, tomatoes, beans, green onions, cilantro, and enchilada sauce.

3. Cook with the lid on low heat for 6 to 8 hours.

4. Add the eggs and muffin mix in a small bowl and put on the chicken mixture.

5. Cook on low with the lid on for 1 to 1 ½ hours or until the toothpick comes out clean after inserting it in the cornbread.

6. Put some cheese on top and let it cool with the lid on for 5 minutes.

7. Add the optional ingredients if you want.
