Black Bear Stew

Ingredients

1½ lbs. lean bear meat, cubed

2 quarts water

½ cup vinegar

Salt & pepper

½ small onion, chopped

½ green pepper, chopped

2 medium potatoes, cubed

2 cups diced carrot

3 stalks celery, cut into ½-inch pieces

18-oz. can tomatoes

2 Tbsp. cornstarch

Directions

Wash meat in cold water, then soak for 15 minutes in water and vinegar. Dry meat in towel and fry with salt and pepper, onion and green pepper. When well fried, add potatoes, carrot, celery and tomatoes. Simmer for 45 minutes. While simmering, add the cornstarch dissolved in a few tablespoons of water.

Serves 2 to 4.
