Ingredients:

2 tablespoons olive oil

2 onions, peeled and chopped

2 carrots, peeled and chopped

1 rib celery chopped

1 large parsley root, chopped

1 pound dried lentils, washed and drained several times

2 whole black pepper corns, whole

2 whole cloves

2 bay leaves

4 cups vegetable or chicken stock

1 large potato, peeled and grated

salt and pepper to taste

2 tablespoons vinegar

Directions:

• Heat the oil in a large soup pot and add the onion, carrots, celery and parsley root. Sauté to a golden brown.

• Add the lentils, pepper corns, cloves, bay leaves and the stock.

• Add the grated potato and bring to a boil.

• Reduce heat to a simmer and cover the pot simmering for 1 hour or until the lentils become tender.

• Remove the bay leaves, cloves and pepper corns.

• Add the salt and pepper.

• Add the vinegar right before serving.
