This dish, bibim gooksu, is the noodle version of bibimbap. These spicy cold noodles are refreshing in the summer when you don’t want to spend a lot of time in front of the stove and the weather’s too warm for hot, heavy dishes. It’s an easy dish to throw together, but it is still full of spice, flavor, and texture and it makes for a complete and satisfying meal.

I like to make this with buckwheat noodles (memil gooksu or soba) since they’re so delicious and healthy, but you can substitute other thin noodles if you don’t have any soba at home. Try it with naengmyun, Korean noodles that are slightly chewy and made up of buckwheat and other flours. This is an adaptable, delicious recipe that can go a hundred different ways.
