Herb-Roasted Potatoes

Most recipes for roasted potatoes involve olive oil, refined vegetable oils, or animal fats, but here they are paired with highly adaptable avocado oil. The simple, clean flavors of the potatoes are accented with fresh herbs and earthy garlic. For the best flavor and texture, I always use new (or nugget) potatoes; my favorites are fingerlings, Yukon Golds, and German Butterballs. Pair this classic dish with grilled or roasted meats, simple vegetables, or salad.

YIELD: 4–6 SERVINGS

2 lb new potatoes

2 Tbsp avocado oil

Coarse sea salt and fresh-cracked pepper

3 cloves garlic, peeled and lightly smashed

2 sprigs fresh rosemary

2 sprigs fresh thyme

2 sprigs fresh sage
