Place all the ingredients in the bowl of a food processor or in a high-speed blender and blitz for 1 minute or until you have a smooth consistency.

RAW CARROT & CHIA BITES
You may have noticed by now that there are a few carrot cake variations in this book – from the Carrot cake tray bake (here) to the Carrot cake porridge (here), I cannot get enough of the flavour combination. These raw treats are so easy to make and are packed with goodness. The chia seeds offer up some omega, the flax aids digestion and the carrot boosts your daily vitamin C intake. All natural sweetness and goodness powering up your day. Enjoy as a snack or a little sweet bite after dinner.
MAKES 18–20 MINI SQUARES
1 carrot, peeled and coarsely grated
2 tbsp sunflower seeds
1 tbsp nut butter (e.g. almond, peanut, cashew)
2 tbsp coconut oil, melted
1 tbsp chia seeds
12 dates, pitted
1 tsp flax seeds
1 tsp mixed spice
1 tsp ground cinnamon
40g desiccated coconut
