Cooking over a grill or barbecue is very common in Lebanese and Arabic households, and in fact one of the Arab world’s finest examples of a grilled meat preparation, the shawarma, is also one of its most famous culinary exports. Sadly, what is a flavoursome and succulent way of serving different types of meat in the Levant and Middle East has travelled badly, and the interpretations we encounter so often in the UK bear little resemblance to the original.

As a means of keeping life simple, grilling really does tick all the boxes for me. An interesting marinade and a griddle pan or some hot coals are all you need to pack your meat or fish full of fabulous flavour, all finished off with that lovely charcoal backnote. And depending on the size of your chosen meat, it can be a really quick and easy method of cooking.

The dishes in this chapter could all be presented as part of a mezze selection; they could be served up together to create a sort of ‘mixed grill’ and I’ve also given some suggestions for turning some of them into a main course for an easy midweek meal.
