In a large bowl, gently stir together the goose, Brie cheese, rice, mushrooms, celery, cream, butter, shallots, garlic, thyme, sage, salt, and pepper. Spread into the prepared dish.
Sprinkle evenly with the Parmesan cheese.
Put the baking dish in the oven and bake until the casserole is hot and bubbling in the center, for about 1 hour. Remove from the oven.

1 tablespoon packed light or dark brown sugar
1 tablespoon honey
2 bay leaves
½ cup balsamic vinegar
Grated zest of 1 orange
¼ cup freshly squeezed orange juice
2 tablespoons chopped fresh mint
1 teaspoon chopped fresh thyme

3 cloves garlic, peeled
1 small bunch fresh thyme
