First, make the marinade. In a small blender, blitz half the lime juice, all the lime zest, half the garlic, half the coriander and all the fresh chilli with the extra virgin olive oil. If you don’t have a small blender you can do this step by hand, by grinding the ingredients in a pestle and mortar.

Pour the marinade into a bowl, add the chicken breasts, turn to coat and set aside to marinate for about 30 minutes.

Now make the guacamole. In a large bowl, mix together the remaining garlic, lime juice, coriander and the chilli flakes. Add the avocado flesh with the yoghurt and use a fork to mash until fully combined. Season with a little salt and pepper.

Preheat the grill to medium. Line two baking trays with foil and lightly oil. Lay the tomatoes on one of the lined trays and season with salt and pepper. Cook under the hot grill for around 3–5 minutes, turning halfway through.

Place the marinated chicken breasts on the other lined tray and cook under the hot grill for 10 minutes, or until cooked through, turning halfway through.

Serve the chicken with the grilled tomatoes and a big tablespoon of guacamole.
