Recipe 18: Roast Beef and Potato in a Jar

Tasty roast beef and potato in a jar

Serving Size: 4

Cooking Time: 30 minutes

Ingredients:

7 oz. baby potatoes

1 tbsp. olive oil

8 roast beef slices

8 oz. halved cherry tomatoes

2 cups salad leaves

Dressing

1 tbsp. horseradish

1 tbsp. red wine vinegar

1 tsp. Dijon mustard

4 tbsp. olive oil

Directions:

Preheat the oven to 350°F.

Put the baby potatoes onto a baking sheet and generously drizzle with olive oil to fully coat them. Place the baking sheet into the oven and cook for 25 minutes, or until they are golden brown and tender in the center.

Whisk all the ingredients in a sizable bowl until thoroughly mixed.

Divide among 4 pint-sized jars, followed by a layer of potatoes.

Next, add the roast beef, tomatoes, and salad leaves.

Cover with the lids and refrigerate.
