Method:

In a saucepan, boil the quinoa in chicken broth.

Lower the heat and simmer for 20 minutes.

Preheat your oven to 425 degrees F.

Arrange the onion and sweet potato on a single layer in a baking pan.

Drizzle with the olive oil and season with the salt and pepper.

Toss to coat evenly.

Bake in the oven for 25 minutes.

In a pan over medium heat, pour 1 tablespoon olive oil.

Cook the ginger and 2 cloves garlic for 1 minute.

Add the chicken and cook for 6 minutes per side.

Slice the chicken into cubes.

In a bowl, mix the honey, lime juice, remaining garlic, soy sauce, peanut butter and honey.

Stir in sesame oil and remaining olive oil.

Mix well and set aside.

Put the quinoa in the bowls.

Top with the baked sweet potatoes and onions, chicken, avocado and spinach.

Sprinkle the sesame seeds and drizzle the honey sauce on top.
