Some chefs call the traditional plate a “three-point landing.” The three points are meat, veg, and starch. Even nonvegans get bored by that construct, and there is no reason to limit your thinking to the triangle. If vegetarians have one thing in common with vegans, I’d say it is a presence of vegetables in just about every course but dessert—vegetables add texture, color, and flavor. Since we are plant-based eaters, there is no need to build a wall between the grains, beans, and veggies. It’s all good. Nothing is stopping you from enjoying a salad or a soup as your main course, so eat what feels right.
