Broccoli Rabe
Also known as rapini, broccoli rabe (or raab) is part of both the cabbage and turnip family of vegetables. It has 6- to 9-inch stalks and scattered clusters of broccoli-like buds. This Italian favorite has a distinctive nutty but slightly bitter flavor and can be cooked many ways.
Purchase broccoli rabe that is crisp and green and fresh-looking. Store it in the refrigerator, loosely wrapped in a plastic bag, for up to three days. To cook broccoli rabe, wash thoroughly and remove the tough ends of the stems—about an inch.
Try one of the following ideas using broccoli rabe.
PESTO CHICKEN AND BROCCOLI RABE PIZZA Spread a purchased pizza crust with ¼ cup refrigerated or homemade pesto, ¾ cup shredded cooked chicken, 1½ cups sliced broccoli rabe and 1 cup shredded mozzarella cheese. Bake pizza as directed on pizza crust package.
BROCCOLI RABE WITH GARLIC AND BACON In 10-inch skillet, cook 2 slices cut-up bacon over medium heat 3 to 5 minutes or until crisp. Stir in 2 cups cut-up broccoli rabe and 1 finely chopped garlic clove. Cook and stir 4 to 6 minutes or until broccoli rabe is fork-tender.
CANADIAN BACON AND BROCCOLI RABE SANDWICHES For each sandwich, spread 2 slices whole-grain bread with 1 tablespoon mustard-mayonnaise. Place about ½ cup sliced broccoli rabe on 1 slice; top with 2 to 3 slices Canadian bacon and 1 slice mozzarella cheese. Top with remaining bread slice, mustard mixture side down. Spread outsides of sandwich with butter. Cook in skillet over medium-low heat 3 to 4 minutes on each side or until toasted and cheese is melted.
MEATBALLS AND BROCCOLI RABE In 10-inch skillet heat 1 tablespoon olive oil. Cook 2 cups sliced broccoli rabe in oil 3 to 4 minutes or until fork-tender. Stir in 8 ounces thawed, cooked Italian meatballs and ¼ cup roasted red pepper. Cook and stir until thoroughly heated; stir in 2 tablespoons chopped fresh basil.
BROCCOLI RABE WITH PASTA In 10-inch skillet, heat 1 can diced tomatoes with oregano, garlic and basil over medium heat until hot. Stir in 2 to 3 cups cut-up broccoli rabe. Serve over hot orecchiette pasta; sprinkle with shredded fresh Parmesan cheese.
BROCCOLI RABE WITH CARROTS In 10-inch skillet, cook 1 cup julienne-cut carrots and ½ cup sliced onion in 1 tablespoon olive oil 3 to 4 minutes or until fork-tender. Stir in 2 cups cut-up broccoli rabe and 1 tablespoon chopped fresh oregano. Cook 3 to 4 minutes or until broccoli rabe is just tender.
