Egg Dishes

Egg dishes make popular starters, and a whole Spanish omelette is a filling lunch on its own. Tortillas (omelettes) may be filled with asparagus, tuna or mushrooms. Huevos a la flamenca is a baked dish of eggs cooked on a base of tomato, garlic and herbs – usually accompanied by diced ham or spicy chorizo sausage, fresh peas and sweet red peppers.

Paella

Spain’s most famous dish, which the Spaniards usually eat at lunchtime, deserves to be discussed separately. The main ingredient of paella is saffron-flavoured rice, cooked with olive oil, seafood and chicken. But every cook has his or her own variation on this colourful dish that originated in Valencia on Spain’s eastern coast. The name paella derives from the flat, round metal pan in which it is cooked.

The secret of perfect paella is fresh ingredients; fresh seafood such as langosta (spiny lobster), langostinos (a kind of prawn), cigalas (giant prawns or sea crayfish), gambas (prawns), mussels, clams together with chicken or rabbit, peas, sweet peppers and artichoke hearts, all cooked together slowly as the rice absorbs the juices.
