Ron is proud of Len’s wit, and grins and claps along, looking at us for approval.

The pig goes next into the scalding tank. Things can go wrong here. If Len’s not done a proper job, the pig can regain consciousness, and when that happens, Dante himself would be lost for words: screeching, plunging, eyes rolling, swallowing gallons of boiling water, blood and dung. But today, at least, Len’s on target, and the pigs process silently, twitchingly on to de-bristling, disembowelment and dismemberment.

Ron can breathe again. He delivers us back to the manager, job done.

‘So, ladies and gents, nothing to be frightened of, is there? You can have your sausage and mash knowing that the pig’s suffered no more than the potato, right?’

He’s used that line before, and is rather proud of it.

No one says a word in the minibus on the way back. We’re back by lunch. They’ll start killing again at 1.30.

I hadn’t met X at the time, but if he’d been there, I’d have done anything to avoid catching his eye.

The slaughterhouse was a very long way from the upper Palaeolithic, but it’s amazing how far you can get if you stop walking.
