Make your own taco seasoning mix. In a jar, combine 3/4 cup dried, minced onion, 1/4 cup each salt and chili powder, 2 tablespoons each cornstarch, red pepper flakes, ground cumin and dried, minced garlic and one tablespoon dried oregano. Four tablespoons of mix equals a 1-1/4 ounce envelope.

This is a tasty quick & easy meal to toss together on a busy day. If time is short, you can bake the potatoes in the microwave while you are making the beef mixture to go on top.

4 russet potatoes, baked

1 lb. ground beef

1-1/4 oz. pkg. taco seasoning mix

1/2 c. water

1 c. shredded Cheddar cheese

Garnish: sliced green onions

Optional: salsa

With a sharp knife, cut an X in the top of each warm potato; fluff pulp with a fork and set aside. Brown beef in a skillet over medium heat; drain. Stir in seasoning mix and water; bring to a boil. Simmer over low heat for 5 to 7 minutes, stirring occasionally. To serve, top potatoes with beef mixture, cheese, green onions and salsa, if desired. Makes 4 servings.
