Cornish Gilliflower

Although this variety has been called an ugly duckling, it’s more of a Cinderella. A close look shows Cornish Gilliflower to be a fascinating object, displaying subtle shifts in color and constellations sketched by the russeting. Its shape is curious as well, with ribs and a tapering base. The lore surrounding this variety puts its beginnings as a chance seedling by a house in Truro, out on England’s Cornish peninsula, two centuries ago.

The yellow flesh is firm, fine-grained, and high-flavored. Written accounts claim an odor of cloves, and the name gilliflower long has been applied to describe plants, flowers especially, that have a clovelike scent. The term bounces back through time and various dialects to early French, Latin, and ancient Greek. But let your own senses be the judge.

The apples ripen in October and store fairly well.
