16 - Cinnamon and Basil Ice Cream
If you want to experiment with herbal ice cream, you can try making this. The flavor of basil gives this ice cream a delicious flavor.
Prep Time: 45 minutes + chilling + 10 minutes processing + freezing
Serving Size: 2 cups
Ingredients:
¾ cup of heavy whipping cream
1 ¼ cups of whole milk
4 lightly beaten large egg yolks
½ cup of sugar
1 cinnamon stick
¼ tsp vanilla extract
12 fresh basil leaves
Optional: ground cinnamon
Procedure:
Heat milk to 175 degrees in a small saucepan. Take it out from the heat and put it in the cinnamon stick and basil. Cover and steep for 30 minutes. Strain and throw the cinnamon stick and basil.
Put the heat back and add the sugar until it dissolves. Mix a small portion of the hot mixture in the egg and put it back in the pan. Constantly whisk it.
Cook and mix on low heat until the mixture becomes thick, or the temperature reads at least 160 degrees. Constantly stir and donât allow it to boil. Take it out from heat immediately. Place it quickly in a bowl and a pan with ice water.
Mix gently and occasionally for around 5 minutes or until it cools down.
Add the cream and vanilla and press plastic wrap on the surface of the custard. Refrigerate for a few hours or overnight.
Fill the cylinder of an ice cream maker not more than â full. Freeze following the manufacturerâs instructions. Refrigerate the remaining mixture until it can be frozen.
Place the ice cream in freezer containers and freeze for 2 to 4 hours or until it becomes firm. Do the same for the rest of the ice cream mixture.
Top with ground cinnamon if you want.
