Bulgur Salad with Chickpeas, Pomegranate Seeds, and Almonds

Tabbouleh is a Syrian and Lebanese salad made with bulgur wheat and finely chopped herbs and vegetables. This recipe adds almonds, fresh chickpeas, and pomegranate seeds to the mix, resulting in a vibrant and substantial vegetarian main course or side dish.

Fresh chickpeas (garbanzo beans) resemble edamame and are pale green in color, with a papery pod that should be removed before eating. They are available fresh in markets in summer and may be found in the frozen section of some supermarkets. If desired, canned chickpeas may be substituted.
