Portobello Pizzas

PREP TIME: 10 MINUTES / COOK TIME: 10 MINUTES / SERVES 4 / 350°F

Can you eat pizza while trying to lose weight? Only 25 calories each, these “pies” replace carb-heavy crusts with portobello mushrooms. Prep and cook times are very short, making them ideal for family movie night. Each person can top with their favorite healthy toppings.

Olive oil

4 large portobello mushroom caps, cleaned and stems removed

Garlic powder

8 tablespoons pizza sauce

16 slices turkey pepperoni

8 tablespoons mozzarella cheese

1 . Spray a fryer basket lightly with olive oil.

2 . Lightly spray the outside of the mushrooms with olive oil and sprinkle with a little garlic powder, to taste.

3 . Turn the mushroom over and lightly spray the sides and top edges of the mushroom with olive oil and sprinkle with garlic powder, to taste.

4 . Place the mushrooms in the fryer basket in a single layer with the top side down. Leave room between the mushrooms. You may need to cook them in batches.

5 . Air fry for 5 minutes.

6 . Spoon 2 tablespoons of pizza sauce on each mushroom. Top each with 4 slices of turkey pepperoni and sprinkle with 2 tablespoons of mozzarella cheese. Press the pepperoni and cheese down into the pizza sauce to help prevent it from flying around inside the air fryer.

7 . Air fry until the cheese is melted and lightly browned on top, another 3 to 5 minutes.

Air Fry Like a Pro: Pushing the pepperoni down into the pizza sauce and mushroom will help keep the pizza toppings intact.
