Spicy Cod Fish Sticks

Prep time: 10 minutes , Cook time: 10 minutes , Serves 4

Ingredients:

1 pound cod

¼ cup mayonnaise

2 Tbsp mustard

½ tsp salt

½ tsp ground cayenne pepper

1 ½ cups ground pork rinds

2 Tbsp whole milk

Instructions

Preheat your air fryer to 400 degrees F and line your air fryer tray with foil and spray with cooking grease.

Dry the cod filets by patting with a paper towel. Cut the fish into strips about 1 inch wide and two inches long.

In a small bowl, combine the mustard, mayo and milk and stir together well.

In a separate bowl, combine the ground pork rinds, salt and cayenne pepper.

Dip the fish strips into the mayonnaise mix and then into the pork rind mix, coating the fish completely. Place it on the prepared tray when done and repeat with the remaining fish sticks.

Place the tray in the air fryer and bake the fish for 5 minutes, flip and bake for another 5 minutes. Serve while hot!
