Spicy Ground Tofu Tacos

Makes 12 tacos

If you love classic tacos, try this new, improved version—with a better taste and texture than old-school hamburger filling.

1/4 cup low-sodium tamari or soy sauce

1 tablespoon creamy peanut butter

1 teaspoon each cumin, garlic powder, and chile powder

1/2 teaspoon cayenne pepper sauce

16 ounces frozen and thawed extra-firm tofu

1 tablespoon olive oil or canola oil

12 taco shells

Taco toppings, such as salsa, tomatoes, and lettuce

Preheat oven to 350 degrees. Mix together tamari, peanut butter, spices, and cayenne pepper sauce in a medium bowl and set aside.

Drain water from tofu block by wrapping it in a thin kitchen towel and wringing out all liquid. Unwrap tofu and crumble into small bits into mixing bowl and toss with sauce.

Spread oil on a baking sheet. Sprinkle crumbled tofu on top of oil in a thin layer. Bake for 20 minutes. Remove from oven and stir. Return to oven and cook for about 20 more minutes, until moisture is almost gone and tofu is crispy. Spoon mixture into taco shells and top with desired toppings.
