Add water 1 to 2 tablespoons at a time to keep the vegetables from sticking to the pan. Stir in the curry paste and cook for another 30 seconds.

Add the almonds (if using), green onions, and rice and cook until heated through. Season with salt and pepper.

Stir-Fried Bok Choy and Rice in Garlic Sauce

Serves 2

☐ ½ medium yellow onion, peeled and diced

☐ ½ medium red bell pepper, seeded and diced

☐ 1 bunch baby bok choy, trimmed and chopped

☐ 3 cloves garlic, peeled and minced, or to taste

☐ ¼ cup Chinese Brown Sauce, or to taste

☐ 2 tablespoons dry sherry, optional

☐ ½ teaspoon crushed red pepper flakes

☐ 2 cups cooked brown rice, fully cooled

☐ 4 green onions (white and green parts), thinly sliced

Heat a large skillet over high heat. Add the onion and red pepper and cook for 4 minutes.
