Chicken Terrine with Pistachio Pesto

If you’re new to making terrines this is a good one to start with and a little more straightforward than the hare terrine recipe. In this recipe, I’ve simply put a cut breast and some prunes running through the centre, but as you get more adventurous you can also experiment with including other garnishes. I particularly like the pistachio pesto served with this. I borrowed the recipe from Sicily, where we holidayed one summer, and the unique twist is that you make it with an ice cube that helps set the green colour. Pistachio and chicken is a great match.

If you don’t have the size terrine I specify, use a large loaf tin with a 1.2-litre capacity, and cover the mixture with kitchen foil while it cooks.
