Waldorf Salad

SERVES: 4 as a side

Waldorf salad is a timeless classic originally created by the Waldorf Astoria Hotel in New York City. Apples, celery, grapes, and walnuts are the stars of this delicately sweet and lightly tart salad, tossed in mayo. My version uses raspberries, which are low in sugar, instead of grapes, a creamy Greek yogurt mayo, and some shaved Parmesan for added protein and texture.

GREEK YOGURT MAYO

¼ cup/55g whole-milk plain Greek yogurt

1 tsp rice vinegar or white vinegar

1 tsp Dijon mustard

¼ tsp salt

¼ tsp cracked black pepper

1 small green apple such as Granny Smith (5 oz/140g), diced

3/4 cup/75g thinly sliced celery

½ cup/56g toasted walnuts, chopped

½ oz/14g shaved Parmesan cheese, shaved using a vegetable peeler

½ scant cup/50g raspberries

TO VEGANIZE

Use your preferred vegan Greek-style yogurt in place of the Greek yogurt and skip the Parmesan.
