1. Heat the oven to 240°C/fan 220°C/gas mark 9. Line a baking tray with baking parchment.

2. Combine all the dry ingredients in a large mixing bowl. Combine the buttermilk and milk together in a jug, then pour into the dry ingredients and mix together very lightly, just to form a wet dough – do not knead it.

3. Turn the mixture out onto a floured surface and then, using clean, dry hands, lightly pat it into a round. Transfer this onto the lined baking sheet.

4. Use a sharp knife to cut across the dough, as though to split it in two, but only go halfway down to the baking sheet. Repeat at right angle to the first cut to get a deep cross.

5. Bake the bread in the middle of the oven for 20 minutes, then reduce the heat to 220°C/fan 200°C/gas mark 7 and bake for another 15 minutes. It should sound hollow when tapped on the base. Remove from the oven and allow it to cool completely before cutting or breaking it apart.
