Peppers
Peppers were brought to Europe in the sixteenth century from Central and South America. Originally, all peppers were spicy, but the mild varieties were cultivated first, which is how the sweet peppers came to be. Paprika plants require much light and warmth. If you raise them in pots, they can be transferred to the garden in May, but they do not survive freezing temperatures.
A pepper’s color depends upon its degree of ripeness. Green peppers are immature, but yellow, red, or orange ones are completely ripe. Peppers can be eaten raw or stuffed and used in casseroles or sauces. Since they are sensitive to the cold, store them in a cool location outside of the refrigerator.
