To Blanch Green Beans

Blanching is a useful method if you want to add green beans to salads or serve them with other “raw” vegetables and a dip. Blanch the beans in a medium-size pot of salted boiling water so they’re no longer raw but they maintain their crunch and color, 1 to 2 minutes. Drain the beans and immediately drop them into an ice bath to shock them. When cool to the touch, drain the beans and pat them dry. Use immediately or store in an airtight container in the refrigerator for up to 3 days.
