This gazpacho is best enjoyed on an outdoor patio just after sunset on a warm summer evening. But really, anytime you want a simple, spicy starter soup, this will do, no matter the weather. Add some crunch by topping with homemade croutons.

Ingredients

2 medium cucumbers, peeled and diced

½ medium red onion, peeled and diced

2 large tomatoes, cored and diced

¼ cup chopped fresh cilantro

2 medium avocados, peeled, pitted, and diced

4 medium cloves garlic, peeled

2 tablespoons freshly squeezed lime juice

1 tablespoon red wine vinegar

¾ cup Vegetable Broth (see recipe in this chapter)

1 medium serrano chili pepper

⅛ teaspoon salt

⅛ teaspoon black pepper
