2¼ Tbsp. spiced salt* (see below)

5 eggs

3 cups diced mushrooms

1 cup water

Combine all ingredients, mix well, and stuff into hog casing. To cook, panfry or broil.

*SPICED SALT

7 Tbsp. salt

2½ Tbsp. black pepper

8 Tbsp. ground mixed spices (commercial product)

SAUCISSES DE FRANCE (SPICY)

3½ lbs. fine ground pork

1½ lbs. firm bacon fat, diced

1½ Tbsp. salt

2 tsp. freshly ground pepper

¾ tsp. savory

¾ tsp. coriander

¾ tsp. marjoram

1½ tsp. thyme

1 ground bay leaf

1 cup red wine
