Turkey Sausage with Jalapeno and Cilantro

The secret to this recipe’s great flavor is the use of fresh chile peppers; add more chile to pack some extra heat.

Yields: 10 servings

Ingredients:

5 lbs. boned turkey meat

2 tbsp. kosher salt

1 tbsp. ground cumin

1 tbsp. ground black pepper

3 tbsp. chili powder

1 tsp. dried red pepper flakes

6 cloves fresh garlic, chopped

1 bunch fresh cilantro, chopped

2 jalapeno peppers, chopped

1 cup dry red wine

Sausage casings

Method of Preparation:

Cut the turkey, including the skin, into 1 in. pieces. Add the meat to the grinder and grind it up.

In a large bowl, combine turkey with remaining ingredients. Cover and refrigerate overnight.

Add the meat mixture to the grinder and grind it up.

Using a sausage stuffer, stuff the mixture into sausage casing.

Twist sausages into links of desired length.

Refrigerate links for 2 hours. Freeze any sausages that you don’t plan to cook within 2 days.
