Brisket generally takes about 3 hours to cook, but it comes out of the pressure cooker moist, tender, and full of flavor in just one-third of the time. Serve it on hamburger buns accompanied with the sauce and crunchy onions, pickles, and hot peppers.

flat-cut beef brisket, 1, about 3½ lb (1.75 kg)

salt

ketchup, ½ cup (4 oz/125 g)

brown sugar, ¼ cup (2 oz/60 g) packed

Worcestershire sauce, ¼ cup (2 fl oz/60 ml)

apple cider vinegar, ¼ cup (2 fl oz/60 ml)

chili powder, 1 tbsp

sweet paprika, 1½ tsp

garlic, 1 clove, pressed

freshly ground pepper

yellow onion, 1, chopped

canola oil, 1 tbsp

soft hamburger buns, 8

sliced red onions, pickles, and pickled hot peppers for garnish (optional)
