Trim and wash the spinach. Place it in a saucepan with some water clinging to the leaves. Cover and cook over medium heat until wilted, about 2 to 3 minutes. Drain off the water. Set aside.

Place the basil, garlic, soy milk, dressing, parsley, onion powder, and soy sauce in a blender or food processor. Add the spinach and process until smooth.

Place the remaining ingredients in a large bowl. Add the blended dressing and toss to mix.

1⁄2 pound rotini

1⁄2 small red onion, chopped

1⁄4 pound snow peas, trimmed

2 tablespoons fresh lemon juice

1 cup each chopped red and yellow bell pepper

1 tablespoon soy sauce

1 clove garlic, minced

Dash ground ginger
