◁ ONION SOUP

Fragrant, piping-hot onion soup—what a wonderful way to greet a chilly night! This soup is delicious as a first course, or it can be a light meal with a salad and crusty bread.

2 pounds (910 g) yellow or Spanish onions, sliced very thin

3 tablespoons (45 g) butter

1 cup (235 ml) red wine

1 (64-ounce or 1880-ml) can beef broth

Salt, to taste

Black pepper, to taste

In a slow cooker, combine the onions and butter. Cover and cook on low for 4 hours, or until the onions are very soft and a little caramelized. Add the wine and broth. Cover and cook on low for another 4 hours. Season with salt and pepper.

Yield: 6 to 8 servings

Some cheese melted on top of the soup gives it that French Onion Soup feel.
