If the pressure hasn’t returned to normal within 15 minutes, use the quick-release method to bring it fully back to normal.

5 Unlock and open the pot; discard the rosemary and thyme sprigs. Transfer the chicken thighs to plates or a platter; stir the sauce before serving.

TESTERS’ NOTES

• Lemons and olives are a classic Mediterranean combo: sour and salty, a great match to the fairly sweet chicken thighs. The balance comes from the sweet heat of the red pepper flakes: we advise you use the full amount—or even double the amount, if you can handle it.

• Kalamata olives are moderately sized black or brown olives, originally from Greece but now grown elsewhere around the world. They are usually preserved in olive oil and have a meaty texture that matches that of the chicken thighs.

• The lemon (even its rind) will soften and almost melt under high pressure. You can eat every bite—and should, the biggest spike of flavor in the dish.
