Try other combinations of vegetables that look wonderful and fresh at the market, especially when in season, such as chopped tomatoes, cucumbers, with chopped fresh chives or basil; julienned (chopped in long thin pieces, similar to matchsticks) carrots, red pepper, and jicama or cucumber, tossed with sunflower or sesame seeds and chopped parsley; or a simple mixture of wonderful fresh mixed greens, tossed with peppery greens such as arugula.

You can also use your favorite vegetables, seeds, and nuts in place of some of these ingredients. For example, replace sesame or pumpkin seeds with sunflower seeds, or the snow peas or peppers with finely chopped broccoli or cauliflower florets (blanch first, if you wish). Think of adding different vegetables that are in season at the time, such as some roasted or blanched asparagus, and the varieties of tomatoes that are most ripe and in season.
