Crab Collection
RAINBOW GIRLS CRAB FLUFF
1 pound crab meat
1 egg, slightly beaten
1 tablespoon parsley flakes
1½ teaspoons Old Bay Seasoning
10 saltine crackers
2 tablespoons mayonnaise
2 tablespoons mustard
oil for frying
Batter:
1 egg
1 cup self-rising flour
1½ tablespoons parsley flakes
milk
Mix crab meat, egg, parsley, and Old Bay together. Roll saltines with rolling pin to make crumbs. Add crumbs, mustard, and mayonnaise to crab mixture. Mix thoroughly. Shape into crab cakes. Make batter.
To make batter, whip egg with a spoon; add flour, parsley flakes, and milk to make batter like pancakes. Mix. Heat oil in fry pan or deep fryer enough to cover cakes. Dip cakes in batter. Fry until golden brown. Serves 4 to 6.
