HALAWY DATE AND GOAT-CHEESE ROLL WITH TOASTED SESAME SEEDS

SERVES 6 TO 8

8 oz/225 g fresh goat cheese

8 oz/225 g Halawy or Medjool dates, pitted

1/3 cup/45 g sesame seeds

Halawy dates are a smaller variety than the popular Medjools, with unbelievable honey and brown-sugar flavors and a creamy texture that could easily pass for a soft butter caramel. They are so tender that no chopping is needed, as they will break up in your fingertips to meld harmoniously with the goat cheese.

This cheese-date log is a delightful way to dress up a cheese board for the holidays, or to serve on its own for an afternoon tea with fresh grapes and plain crackers.

With clean hands, mix the goat cheese and the dates together in a bowl until the mixture is a smooth paste. Roll the mixture into a log shape roughly 2 in/5 cm thick and about 8 in/20 cm long and set aside.

Toast the sesame seeds in a small, dry skillet over medium heat for about 1 minute, until just barely turning golden, taking care not to burn them. Remove from the heat and immediately pour the seeds out onto a plate. Let cool completely.

Roll the cheese-date log in the toasted sesame seeds to coat well and serve. The log can be prepared up to 3 hours in advance and refrigerated, but be sure to allow it to come to room temperature before serving.
