For the dressing:
5 tbsp soy sauce
3 tbsp rice wine vinegar
2 garlic cloves, crushed
1 red chilli, diced
1 tsp diced fresh root ginger
1 tbsp brown sugar
2 tsp toasted sesame oil

1 Preheat the oven to 200°C, 400°F, gas mark 6. Line a baking tray (cookie sheet) with baking parchment (parchment paper).
2 Cut the aubergines into 2.5cm (1in) chunks. Lightly toss them in the olive oil in a bowl and spread them out on the lined baking tray. Roast in the preheated oven for 20–25 minutes until really tender and golden brown.
3 Meanwhile, cook the soba noodles according to the instructions on the packet.
4 Make the dressing: mix all the ingredients together in a bowl until well blended.
5 Toast the sesame seeds in a small dry frying pan (skillet) set over a medium to high heat, tossing them gently for 1–2 minutes until they are golden and fragrant. Remove from the pan immediately before they burn.
6 Put the aubergines, warm noodles, mango and cucumber in a serving bowl. Toss in the dressing and sprinkle with the spring onions, basil and toasted sesame seeds.
