NOTE: To press the tofu, remove the tofu from the packaging and drain the water. Place the block between paper towels or a kitchen towel. Wrap firmly around the block and transfer to a plate. Top with another plate and place a heavy object (book, cans) on top of the plate. Allow tofu to press for 30 minutes to an hour. Drain and cut into small cubes.

My mom used to make this simple dish often when we were younger. At the time, I was not a fan of eggplant and would always try to sneak some onto my brothers’ plates since they loved it. Now that I’m older, I actually love eggplant and this savory and slightly spicy version is similar to the one my mom used to make.
