Ginger Hot Water Infusion + Lemon

No tea bag necessary or desired. Use fresh ginger for the best-tasting infusion with tons of medicinal properties. Feel free to mix and match the fruit or use more fruit if you like.

ingredients

16 ounces filtered water

One 2-inch piece fresh ginger, thinly sliced (if organic, no need to scrape off the skin)

2 lemon slices, or ½ cup fresh mint, raspberries, or dried apricots

method

Place the water and ginger in a lidded pot and simmer over medium-low heat for 5 minutes. Turn off the heat, cover, and steep for 4 to 6 minutes. Let the water cool down for a few minutes, then pour into a heatproof lidded container or glass jar. Add the fruit and marinate, covered, for 10 to 20 minutes. The ginger can be removed when the taste is to your liking, anywhere from 15 minutes to 2 hours. Serve warm or refrigerate for iced tea. If serving cold, add infused ice cubes.
